I know the popular phrase is “Breakfast of Champions” but with this section I wanted to make you the Breakfast Champion. Fall and Winter weather makes me want to lounge in pajamas with a cup of coffee and a big breakfast.
One of my favorite breakfast foods is French toast. Even though I love to eat it, sometimes cooking it can feel like a task if you’re preparing for multiple people. I wanted a way to enjoy French toast while relaxing in my pajamas and sipping coffee instead of dipping and flipping french toast for an hour in front of a stove. In this recipe I created a make ahead version that you can pop in the oven before anyone is even awake so you can cherish a little quiet time. If you combined French toast, pumpkin pie, and bread pudding this recipe is what you would get. On vacations with friends I am the self proclaimed breakfast cook and this is always a winner. Mix and assemble the night before for an easy morning of breakfast prep.
Even after the fall season you can use this recipe without the pumpkin pie mix, just add 3/4 cup of sugar, 1 cup of milk, and 1 teaspoon of cinnamon to the recipe.
