Breakfast Champion
I know the popular phrase is “Breakfast of Champions” but with this section I wanted to make you the Breakfast Champion. Fall and Winter weather makes me want to lounge in pajamas with a cup of coffee and a big breakfast.
Quiche is one of the easiest breakfast dishes but is sure to impress. It sounds fancy and typically the price reflects this fancy image on a brunch menu. In reality, it is a low cost recipe and I typically make it when I have fridge drawer full of vegetables that are close to spoiling. Restaurants do the same thing, but don‘t tell their secret. This Spinach and Feta Quiche is super flavorful thanks to the mushrooms cooked with soy sauce and butter. You could substitute with sausage if your prefer.
In the recipe I called for a ”pre-baked pie shell”. I used a frozen pie shell and it had directions for pre-baking but if you prefer to make a homemade pie dough just be sure to bake till browned before adding the egg mixture. If you don’t pre-bake you will end up with a soggy crust, nobody wants that!
