(FUN) Salad

To be honest it can be difficult to make salads fun; but not impossible. I eat a salad almost every day for lunch. Not even primarily for the health benefits, I actually crave salads. To build a Fun Salad I focus on a few important attributes. I always have crunch, acidity, sweetness, and protein. There are an infinite number of ways to achieve all of these attributes so get creative and let the fun begin.


December is an iconic month for one big reason….SANTA (Elf movie reference). Similar to November, cooking and eating in December is typically heavy dishes full of butter and rib sticking goodness. I have no complaints about that, but I do appreciate a fresh salad thrown into the mix. My family typically cooks a turkey for Thanksgiving and ham for Christmas which is why I added it to the recipe. The other great part about Christmas is all the decorations with green and red pops of color and I wanted those colors in the salad as well. Serve this salad at a holiday luncheon or just something special for a weekday lunch break.


I have written the recipe to serve 4 people. I would consider it a larger portion of salad so if

you are serving as a side salad, be mindful of that. This is a salad I would prep on Sunday night for lunch throughout the week. Prep and store the ingredients ahead of time and assemble the salad as you go.


The accompanying homemade pomegranate dressing is delicious. However, pomegranate juice can be pricey and I only call for a 1/4 cup so feel free to look in your refrigerated salad dressing section at your local grocery store for a pre-made pomegranate dressing. In the salad recipe I also call for pomegranate seeds, sometimes you can find those prepared ahead in the produce section.
